General Manager - Night Heron Food & Beverage

Position Summary: Kiawah Island Golf Resort is seeking an accomplished, dynamic, and guest-centric General Manager of Night Heron Food & Beverage to provide comprehensive operational and strategic
oversight for a high-volume, multi-faceted dining and entertainment portfolio. Centered in the
heart of our renowned Night Heron Park, this leadership role is responsible for driving financial
success, service excellence, and team development across three distinct, vibrant resort outlets:
The Nest Market & Café, The Perch, and The Night Heron Grill.

Managing a combined enterprise generating $7M–$8M in annual revenue, the General Manager
will own full P&L accountability, inventory and supply chain ordering, labor optimization, and the
mentorship of several direct-report outlet managers. The ideal candidate blends exceptional
culinary and retail operations expertise with a passion for cultivating memorable guest
experiences in a world-class resort environment.

Salary: $80,000 with bonus eligibility
Qualifications:

Experience: Minimum of 5–7 years of progressive food and beverage management

experience within high-volume resort, hotel, multi-outlet, or upscale hospitality
environments. Prior multi-unit or complex general management experience strongly
preferred.

Financial Acumen: Demonstrated expertise in P&L management, labor scheduling

models, seasonal labor balancing, food/beverage cost controls, and inventory systems.

Operational Versatility: Proven track record managing diverse concepts spanning

casual à la carte dining, seasonal quick-service/poolside operations, high-volume
retail/market spaces, and family entertainment centers.

Leadership Skills: Inspiring leader with a hands-on management style, exceptional

communication skills, and a proven ability to develop and retain talent.

Education: Bachelor’s degree in Hospitality Management, Business Administration, or a

related field is preferred (equivalent practical experience will be considered).

Certifications: ServSafe, food safety, and alcoholic beverage service certifications

required.
Expectations & Responsibilities:
Financial & Administrative Leadership

P&L Accountability: Maintain full financial ownership of the $8-10M Night Heron F&B

portfolio, consistently meeting or exceeding revenue, labor cost, and gross profit margin
targets.

Budgeting & Forecasting: Partner with executive leadership to develop annual

operating budgets, capital expenditure proposals, and strategic revenue-growth
initiatives.

Purchasing & Inventory Control: Oversee comprehensive ordering, supplier relations,

and inventory management across restaurant, café, market, and retail product lines to
minimize waste and optimize prime costs.
Operational Excellence

Cross-Outlet Oversight: Ensure seamless daily coordination between front-of-house

service, culinary production (The Nest kitchen), retail merchandising, grocery delivery
logistics, and recreation partnerships (Treehouse/Pool complexes).

Quality & Standards Assurance: Uphold Kiawah Island Golf Resort’s world-class

standards of hospitality, cleanliness, safety, and presentation across all three venues.

Seasonal Execution & Scaling: Spearhead operational readiness for seasonal

shifts—specifically orchestrating the March-through-October seasonal launch and
wind-down for the Night Heron Grill, while managing high-demand summer volume (e.g.,
600+ daily lunch covers) alongside steady year-round operations at the Market and
Perch.
Team Leadership & Development

Direct Report Management: Lead, mentor, and evaluate a strong team of direct-report

outlet managers, providing continuous coaching, performance feedback, and
professional development.

Talent Acquisition & Training: Oversee hiring, seasonal ramp-ups, onboarding, and

comprehensive service training programs to build high-performing, guest-focused
operational teams.

Cross-Functional Collaboration: Partner closely with Resort Recreation, Retail,

Marketing, and Culinary leadership to synchronize park-wide programming, events, and
promotions.
Essential Physical Requirements:

Flexibility to work varied shifts, including mornings, evenings, weekends, and holidays, in alignment with resort peak seasons and seasonal outlet openings (March–October for

the Grill).

Ability to stand, walk, and navigate indoor/outdoor resort environments (including pool decks and activity centers) for extended periods.
