  • Lead and supervise the Galley team during all buffet and alternative dining operations, ensuring smooth, efficient, and safe service as directed by the Executive Chef.
  • Oversee food production and delivery in the Buffet Area, Bell Box, and Alternative Dining outlets, ensuring strict adherence to company recipes, portion sizes, and preparation methods.
  • Maintain a consistent, high-quality food presentation and temperature across all Lido Deck and Alternative Dining venues, conducting regular walk-throughs and visible leadership visits.
  • Ensure a wide range of menu options is consistently available for guests with special dietary requirements and proactively assist and advise guests on suitable choices.
  • Actively participate in daily Galley management meetings to review the previous day’s performance, address operational challenges, and plan upcoming production and events.
  • Coordinate operating times and service flow with the Lido Manager to ensure all Lido Deck food outlets open on time and run according to schedule.
  • Collaborate closely with supervisors in other Galley sections to maintain a steady, cost-effective supply of food products to the Horizon Court and related outlets.
  • Monitor and control food consumption through portion control, production planning, and consistent use of company recipes to minimise waste and protect food cost.
  • Support the Executive Chef in achieving budgeted stock levels and cost-control targets through accurate ordering, stock rotation, and efficient use of ingredients.
  • Assist the Executive Chef in onboarding, training, and coaching Galley team members—especially those assigned to the Buffet Area—to uphold safety, hygiene, and service standards.
  • Degree in Culinary Arts from a recognized culinary institution, or completion of a three-year formal culinary apprenticeship (or equivalent experience).
  • Minimum of five years’ experience in high-volume hotel, resort, or cruise ship kitchens, including at least two years as an Executive Sous Chef, Chef de Cuisine, or equivalent senior leadership role.
  • Extensive knowledge of international cuisines and modern cooking techniques, with a strong focus on quality, consistency, and presentation.
  • Proven ability to lead, train, and motivate a diverse galley team, providing clear direction and maintaining high performance under pressure.
  • Strong understanding of food safety, public health, and sanitation standards (e.g. USPH or equivalent), with a commitment to safe and compliant operations.
  • Fluent English language skills, both verbal and written, with the ability to communicate clearly with guests and teammates.
  • Confident user of MS Office and job-related kitchen or inventory management software.
  • Demonstrated passion for guest service, with the ability and willingness to deliver outstanding culinary experiences that surprise and delight our guests.
  • Personable communicator with excellent interpersonal skills and a warm, friendly, and caring personality.
  • Proven ability to work effectively in a fast-paced, multicultural environment while building courteous and professional working relationships.
This position involves regular physical activity, including standing for extended periods and lifting or moving heavy items in line with operational requirements.
