- Produce high-quality bakery items in your assigned station in line with company recipes, portioning, and presentation standards, as directed by the Chief Baker / Chef de Partie Bakery.
- Support the Chief Baker / Chef de Partie Bakery in supervising Bakery staff in your area during preparation and service, providing clear direction and hands-on guidance.
- Follow the daily production schedule and adjust output in line with itinerary, outlet needs, and guest volume, escalating any significant changes to the Chief Baker.
- Monitor ingredient usage and yields for your section, promptly informing the Chief Baker / Chef de Partie Bakery of any variances, shortages, or quality issues.
- Maintain, organize, and update recipe files for your section so they are accurate, accessible, and consistently used by all assigned staff.
- Seek regular feedback from the Chief Baker / Chef de Partie Bakery to ensure all products meet company standards for taste, texture, and appearance.
- Apply batch baking and preparation methods (e.g. Danish pastries, muffins, bread items) to minimize waste while maintaining freshness and quality.
- Work to meet Bakery cost and waste-reduction targets, using ingredients, equipment, and consumables efficiently and responsibly.
- Perform all production tasks to the highest possible quality while maintaining speed, accuracy, and cost-efficiency.
- Handle and store all materials, ingredients, and finished products with care, coaching assigned staff to follow correct handling, labeling, and rotation procedures.
- Coach Bakery staff in correct production methods, culinary techniques, recipe knowledge, holding procedures, and product presentation, in line with guidance from the Executive Chef / Chief Baker.
- Support the training and onboarding of new-to-vessel or first-contract Bakery crew, helping them integrate into standards, routines, and safety practices.
- Promote and enforce compliance with company policies, safety and environmental procedures, USPH and Fleet regulations, and other internal and external requirements.
- Carry out assigned duties within the ship’s General Emergency Organization and participate in all required drills and trainings.
- Ensure all work practices within the Bakery comply with ILO 180 and other relevant labor standards.
- Formal qualification in bakery or pastry arts from a recognized culinary training institution.
- At least 2 years’ professional experience in a bakery environment, including a minimum of 1 year as 1st Commis Baker or equivalent level.
- Recent hands-on experience in high-volume bakery production, ideally within hotels, resorts, cruise ships, or similar large-scale operations.
- Strong practical knowledge of bakery techniques, including breads, rolls, laminated doughs, pastries, cakes, and desserts.
- Good understanding of recipe interpretation, scaling, portion control, and product presentation.
- Sound knowledge of public health and sanitation regulations (e.g. USPH) and safe food-handling practices.
- Proven ability to maintain high quality standards while working efficiently under time pressure.
- Strong organizational skills with the ability to prioritize tasks and manage multiple production demands.
- Effective communication skills and the ability to give and receive instructions clearly within a multicultural team.
- Ability to train, coach, and support junior bakery staff in techniques, standards, and safe working practices.
- Demonstrated ability to work collaboratively in a fast-paced, team-oriented environment.
- Good command of the English language, both spoken and written.
