  • Lead the day-to-day operation of the assigned pastry section, ensuring the consistent preparation, baking, and presentation of high-quality pastries and desserts in line with Princess Cruises’ standards and approved recipes.
  • Supervise, coach, and motivate the pastry team at sea, providing clear direction during each shift, conducting pre-service briefings, and fostering a positive, collaborative, and safety-focused work environment.
  • Plan and organize daily production schedules for the pastry section, coordinating with the Executive Pastry & Bakery Chef to balance guest demand, menu cycles, and special events while maintaining timely service.
  • Monitor product quality, portion control, and presentation at all times, taking corrective action where needed to ensure consistency, minimize waste, and meet established cost and yield targets.
  • Oversee the correct use, handling, and storage of ingredients, semi-finished products, and finished items, ensuring adherence to Public Health, food safety, and company hygiene standards.
  • Maintain accurate recipe files and production records for the assigned section, ensuring that all teammates understand and follow standard recipes, methods, and plating guidelines.
  • Identify and develop talent within the pastry team by providing on-the-job training, coaching on techniques and standards, and supporting succession planning in partnership with the Executive Pastry & Bakery Chef.
  • Contribute ideas for menu enhancements, new pastry items, and process improvements, staying informed about current pastry trends and working with leadership to trial and implement approved innovations.
  • Conduct regular checks of equipment and work areas, reporting maintenance needs promptly and ensuring that tools, machinery, and workstations are clean, organized, and ready for service.
  • Act as a role model for Princess Cruises’ values, demonstrating excellent guest service, professionalism, and cultural awareness in all interactions with guests and teammates.
  • Formal qualification in pastry arts from a recognized culinary school or equivalent professional training.
  • At least five years’ experience in high-volume pastry production, including a minimum of two years in a supervisory role (e.g. Demi Chef de Partie Pastry or equivalent) within luxury hotels, resorts, or cruise ships.
  • Strong practical skills across classic and contemporary pastry techniques, including laminated doughs, plated desserts, buffet displays, and specialty items.
  • Solid knowledge of Public Health regulations, food safety, and sanitation standards (e.g. USPH or equivalent), with a proven track record of maintaining excellent audit results.
  • Demonstrated ability to lead, train, and supervise a multicultural team, providing clear direction, feedback, and support in a fast-paced environment.
  • Strong organizational and time-management skills, with the ability to manage multiple production demands while maintaining quality, consistency, and cost control.
  • Good command of the English language, both verbal and written, with the ability to communicate instructions and feedback clearly.
  • A genuine passion for guest service, with a focus on creating memorable experiences through high-quality pastry and dessert offerings.
