  • Supervise daily production in the butchery station, ensuring quality, consistency, and presentation by following portion control guidelines, company recipes, defrosting schedules, and trimming methods as directed by the Executive Chef / Chief Butcher.
  • Plan, organize, and execute an efficient daily production schedule for the butchery section based on itinerary, menu cycles, and outlet requirements, ensuring all cuts and preparations are ready on time.
  • Monitor the consumption and availability of meats, poultry, and seafood, keeping the Chief Butcher informed of production needs and variances to support accurate ordering and cost control.
  • Maintain accurate recipe files, production sheets, and portion guidelines for the assigned section, ensuring they are up to date and easily accessible to all butchery team members.
  • Conduct regular spot checks on stock levels, storage conditions, and product rotation in refrigerators, freezers, and dry stores, ensuring proper labeling, FIFO, and minimal waste.
  • Participate in loading, receiving, and correct storage of provisions as scheduled, verifying quality, temperature, and specifications of meat and seafood deliveries.
  • Lead, supervise, and support assigned Butchery staff during service and preparation, ensuring adherence to production plans, standards, and timelines.
  • Continuously train and coach team members in butchery skills (including trimming, cutting, deboning, and portioning), safe knife handling, and correct use of equipment.
  • Ensure strict compliance with USPH / HACCP, food safety, and sanitation standards in all butchery areas, including cleanliness of workstations, tools, and storage areas.
  • Control food and material consumption in the butchery by enforcing portion and production control, supporting the achievement of cost targets as directed by the Executive Chef / Chief Butcher.
  • Monitor the condition and safe operation of butchery equipment (e.g., slicers, grinders, saws, cold rooms) and immediately report any malfunction or maintenance needs to the Executive Chef / Chief Butcher.
  • Actively participate in daily briefings with the Chief Butcher, providing feedback on previous operations and aligning on upcoming production, special events, and menu changes.
  • Formal qualification or apprenticeship in Butchery or Professional Cookery from a recognized training institution (preferred).
  • At least 5 years’ experience in large-scale butchery operations, ideally within a cruise ship, hotel, resort, or high-volume catering environment; previous cruise ship experience is strongly preferred.
  • Extensive hands-on experience with a wide range of meats and cuts (beef, lamb, pork, poultry, game), including trimming, deboning, portioning, and specialty cuts.
  • Proven experience in processing and preparing seafood, including filleting, portioning, and safe handling of a variety of fish and shellfish.
  • In-depth knowledge of USPH / HACCP requirements, food safety, allergen management, and waste control, with a strong commitment to maintaining the highest hygiene standards.
  • Strong knife skills and proficiency in operating butchery equipment such as slicers, grinders, band saws, and vacuum packers, with a focus on safe operation and maintenance.
  • Well-developed organizational and time-management skills, with the ability to manage multiple production demands in a fast-paced, high-volume environment.
  • Good command of the English language, both verbal and written, with the ability to follow recipes, production plans, and safety procedures accurately.
  • A solid foundation in guest service, with an understanding of how product quality, presentation, and consistency contribute to the overall guest experience.
  • Motivated, reliable, and quality-focused, with a strong work ethic and pride in craftsmanship.
  • Personable and collaborative communicator with strong interpersonal skills and a warm, respectful, and culturally aware approach.
  • Proven ability to work effectively in a diverse, multicultural team, supporting a positive, inclusive, and professional work environment.
