  • Supervise night-shift bakery production, ensuring all items are prepared and presented in full compliance with Company recipes, standards, and photo guidelines.
  • Monitor product quality across assigned stations through regular tasting, visual checks, and oversight of mise-en-place throughout the shift.
  • Oversee the preparation and baking of Danish pastries, muffins, breads, and other bakery items, ensuring all processes follow Company recipes and procedures, and that recipe files are maintained and accessible to the team.
  • Lead and coordinate breakfast production for the night shift, directing Bakery staff during service in line with the guidance of the Executive Chef / Chief Baker.
  • Participate in daily briefings with the Chief Baker to review the previous day’s performance, plan upcoming production, and prepare for special events or operational needs.
  • Conduct clear and structured briefings with Bakery staff in the assigned station at the start of each shift, communicating priorities, standards, and safety expectations.
  • Control food consumption and waste in assigned areas by enforcing portion control, production planning, and strict adherence to Company recipes and standards.
  • Support the achievement of Bakery cost targets as directed by the Executive Chef / Chief Baker through efficient use of ingredients, labour, and equipment.
  • Create and maintain effective daily and shift production schedules for the assigned section, aligned with itinerary requirements and outlet demand, under the direction of the Chief Baker.
  • Monitor ingredient usage and stock levels required for daily production; plan and communicate orders in a timely manner and keep the Chief Baker informed of needs and variances.
  • Stay current with trends and new methods in bakery production, proactively sharing ideas and seeking guidance from the Executive Chef / Chief Baker on improvements.
  • Observe and evaluate Bakery staff performance using role descriptions and standards, recognising top performers and supporting their development and promotion.
  • Provide ongoing training and coaching to Bakery staff on production methods, culinary techniques, recipe and menu knowledge, product holding, and presentation standards.
  • Assist with the training and orientation of new-to-vessel and first-contract Bakery staff as directed by the Executive Chef / Chief Baker, fostering a safe, inclusive, and high-performing work environment.
  • Formal qualification in Pastry/Bakery from a recognized culinary or vocational training institution.
  • Minimum 5 years’ experience in professional bakery or pastry operations, including at least 2 years as a Chef de Partie Baker in a high-volume environment; cruise ship experience is an advantage.
  • Strong practical knowledge of international bakery production, including laminated doughs, Danish pastries, muffins, artisan and soft breads, and specialty baked goods.
  • Proven ability to read, follow, and execute standardized recipes accurately while maintaining consistent product quality and presentation.
  • Solid understanding of food safety, hygiene, and public health standards (e.g. USPH), with a commitment to maintaining a clean, safe, and compliant working environment.
  • Experience supervising and coaching a small team, including task allocation, on-the-job training, and performance feedback in a multicultural environment.
  • Strong organizational and time-management skills, with the ability to manage multiple production lines and deadlines in a fast-paced, high-volume operation.
  • Good command of the English language, both verbal and written, with the ability to give clear instructions and communicate effectively with teammates and leaders.
  • Guest-focused mindset with a passion for delivering high-quality products that enhance the overall onboard dining experience.
  • Resilient, adaptable, and able to work efficiently under pressure, including during peak service periods and special events.
  • Willingness to live and work at sea for extended periods, embracing life in a diverse, international team environment.
This position involves regular physical activity, including standing for extended periods and lifting or moving heavy items in line with operational requirements.
